Days 26-28 – Too much sugar

This past weekend was a blur the way it went by so fast and was so full of activities. It was another good one spent with great and amazing friends. God has blessed me with so many friends that truly care about me. I am so thankful for them!

Here’s a recap of these past few days:

Friday – breakfast was Honey Nut Cherrios. Yes, I know it’s a “Frankenfood” but it is gluten free and I wanted something quick and easy. Plus, I don’t plan on doing that very often. Lunch was left over cauliflower pizza. Dinner was with my home group. Everyone brought snack foods. I still managed to eat well, but I did eat some rice krispy treats.

IMG_8954Saturday, I made scrambled eggs with feta cheese and tomatoes. This was the first time that I reintroduced eggs and this time, I was fine. Weird though, because my blood sugar dropped like I hadn’t eaten anything. Not sure why that happens. I can have no protein and I will feel fine, but then I can eat protein and it drops. If you have any suggestions on this, please do tell. Lunch was a taco salad. Dinner I cooked a taco soup! It was delish! My friends bought me a GF cake and it was good, but way too much sugar.

Today, I didn’t have breakfast. I was so excited to worship the Lord in our new sanctuary at church! It was beautiful and His presence was so thick, but it was FREEZING! For lunch, we ate left over taco soup. IMG_8962Unfortunately, I had another piece of that cake. Not again! The sugar is making me sick. Time to detox from that. Never thought I’d hear myself say that! I’m about to go to a friends to eat some red beans and rice. I may just eat it without rice. My body needs a break from the carbs.

My stomach has been okay lately. I have noticed that I haven’t had to use my oils on my shoulders as much lately. I did this morning though. Probably because of all of the sugar.

Day 25 -Italiano!

Today was filled with such great food and sickness unfortunately, but nonetheless, great food! My lil dude had some loose stools and threw up once. He was a bit queasy before lunch, so I pumped him with ginger ale and rubbed peppermint and lavender oil on his tummy with a warm compress. He was fine once he woke up from nap.

My oldest cooked GF pancakes for breakfast again and they were delicious. She put blueberries in mine.I had mine with a side of peaches. Lunch was left over eggplant parmesan. My snack was white cheddar Skinny Popcorn. For dinner, I was still craving pizza from last night, so I made my own….cauliflower crust! It was good! Even my husband ate it. The texture is different than what I’m used to but it was still good. Next time, I plan on making it thinner so it’s crispier in the middle like the edges were. The edges were the best!

Ending the night with my kiddos and hubs. Enjoying a movie and drinking some wine. Just straight-up chillin’. I folded my laundry, now it’s their job to put it away! That’s how I do things around here. hehehe

Day 24 – Feeling Greeky

For those of you that don’t know, I work part-time from home, but go in at least once a week. Today was the day that I was to go in. I can’t lie, it’s a nice break from the kids and homeschooling. Enjoyed adult conversation!

IMG_8930Breakfast was quick because I was running out of the door, so I picked up a yogurt. I am posting of a pic of this thing because it was beyond good! Probably shouldn’t have it much though because of the sugar, but for today…it was fabulous! I went on a lunch date with a friend from work. We went to Athena’s and I had a gyro salad. Super yummy, just wish I would have gotten the hummus, it would have completed the meal. It was good conversation with her though.

So I’m sitting here, haven’t eaten dinner yet and I am contemplating if I should. I weighed myself today and I haven’t lost anymore weight from the initial loss. I lost those 7 pounds but that’s it. I couldn’t have plateaued already, right? It is discouraging. I was hoping for more progress. Looks like I will have to cut out sugar even more. If I do decide to eat something, it will probably be a peach. But man, oh man, my mother-in-law brought her homemade pizza for dinner and it smells and looks great! Too bad it was cooked with all-purpose flour so I can’t have it. I did eat one pepperoni to get the taste out of my head. Just wish I could dive in and eat! I will stay strong. I will stay strong. Chugging the water to fill the void. Just got done worshiping, so Jesus will fill my spiritual void. 

Day 23 – “It’s a Twista, a twista!”

A windy day today over here in Southern Louisiana! Tornado watches all around and a few that actually touched down. A friend of mine had one touch down 100 yards away from him. Thank God he was kept safe. All private schools were closing their doors early due to the inclement weather. Of course, Lafayette public schools held strong or remained lax, depends on which way you look at it, and they didn’t shut things down. 

While huddling in my house to stay IMG_8929safe and dry, I managed to skip breakfast, not on purpose. Lunch was a very colorful salad which included, spinach, bell peppers, cucumbers, avocados, and kiwi with an oil and vinegar dressing. Dinner was shared with friends at church during our weekly Alpha class. We had an amazing spaghetti with big chunks of zucchini in it. I ate mine without pasta and bread, as hard as that may sound. I did enjoy a piece of my Valentine candy. Are you surprised that there is still any left? I know I am!

Day 22 – Mad Culinary Skills

Today was a good fun day in the kitchen. One of my best friend’s came over and helped me prepare dinner. A dinner that I have never once attempted. It was a success! We cooked eggplant parmesan. Even my kids and my husband loved it! Lucy had two servings! Laney even said she loved it, which is surprising! Eating this means that I introduced cheese back into my diet. May try eggs again later this week. Eek!

For breakfast, I had the ol’ faithful banana. Lunch was pork and gravy that my hubs cooked. I made some peas for the side. Super yummy! I felt great today, as far as my stomach goes. My achiness will go away, In Jesus’ Name! And of course, dinner was eggplant parmesan. 

A lot of work went into dinner. The recipe said 10 minute prep….ummm WRONG! Even with the help of my friend, it still took a while and so many dishes! I had too much flour on the eggplant, so I will have to remember that the next time I cook this. Oh and we ended up having to put more tomato paste because it was too thin and we ran out so we had to make more sauce. So if you plan on trying this recipe, keep all of this in mind.

Day 21 – Birthday Deliciousness

Today is my 34th birthday and I had such a great weekend with family and friends! Last night’s feast continued to today! Before church, my goofy husband had me go pick out my own birthday card. Very romantic, I know. Be jealous, ladies! We are just silly like that so I played along. 

IMG_8924After church, we went to Lotus Garden to eat from the Chinese buffet. I added rice back to my diet last night and still feeling pretty good. So I thoroughly enjoyed the fried rice. I ended up not eating the pineapple and cheese wonton. Didn’t want to over do it. 

Tonight, we had friends over and we picked up some boiled crawfish. That was all I asked for as my birthday present. We picked them up from Crawfish Time and they were fabulous! IMG_8925After that, we enjoyed a game of Skip-Bo and then dove into my mom’s angel food cake with cool whip topped with strawberries and blueberries. I had a small piece. 

My stomach is much better now. Not sure what the heck happened, but glad it’s over. I’m still very achy and tired, so hoping to start seeing some changes soon.

Day 20 – Love me some Cuban

Today started off pretty rough. All I was able to eat was a banana for breakfast, and even that didn’t sit well. Needless to say, I was pretty discouraged. 

We chilled at home just cleaning up, and then I was able to take a long nap with my lil man who doesn’t seem to be feeling too great. We went to Cafe Habana City for some amazing Cuban food. We were there for my dad’s birthday and mine. My brother and his girlfriend came to join us. Good times, good food = happy Amy!

I have to say that I was scared to eat, but I needed to eat. I had chicken tortilla soup as an appetizer, then grilled tilapia limon with black beans and rice and fried yucca root. 45f1805771a3ad169adc8bd2aea0d0f4_160_thumbDELICIOUS!! I forgot to take a picture of my food because I was so hungry, so I found this picture on the web that looked very similar to my plate. They brought out a cake for my dad and me, and the whole table enjoyed it. I only took two bites, but it was really good! 

I’m so excited to help my brother’s girlfriend to start this diet. She has tummy troubles, too! I’m hoping to see great results! Glad to be able to help others!
